Our tasting menu is a proposal that is served to all the table guests both at midday and in the evening. It is a gastronomic journey through eleven dishes which are made with local ingredients and techniques that combine the avant-garde and tradition. With this proposal, the aim of chef Jordi Simón is to awaken the senses through flavours that move and accompany the palate during the trip.
It consists of 4 appetizers, 5 courses and 2 desserts
grilled red mullet with avocado, kimchi lactonesa and shimeji mushrooms
sea snail infused with keffir lime and kombu seaweed, with gordon onion, avocado and tobiko
with chawanmushi and parsley air
Natural with bloody mary / Acevichada natural / Grilled with with yuzu, sake i mirin
with ponzu, wakame seaweed, shitake and pack choi
stuffed with foie, boletus cappuccino and boletus confits
with vegetable consommé and red curry
with meunière sauce, fried capers and noisatte air
with grilled mango, mango chutney, mint and couscous
strawberry cream with mint ice cream and white chocolate ganache
with caramel mousse, popcorn ice cream and caramelized popcorn
